Rapid freezing means the fruit retains its texture, shape and flavour after defrosting. High-volume, low-value fruit and vegetables do not generally benefit from cryogenic freezing and cooling.
Modified Atmosphere Packaging (MAP) will maintain freshness and extend shelf life for other high-value perishable products such as salads and herbs, as well as sliced fruit and vegetables.
